Jamaican Sweet Potato Pudding

If you like to bake or cook, here is an amazing recipe you can try. It’s a Jamaican sweet potato that you can buy at any Jamaican store if you have one near you.

 

In the U.S.A, they call the sweet potato (Batata). You can find it near the vegetable section at your local supermarket.

 

You can add whatever spices you like in this recipe, for example, cinnamon, which will give it a lovely smell and taste.

 

Ingredients You will need

 

3 Pounds Sweet Potato / Batata

 

1 Cup All-Purpose Flour

 

2 Cups Coconut Milk

 

1 Teaspoon Butter

 

1 Teaspoon salt

 

1 1/2 Cup Brown Sugar

 

2 Teaspoon Vanilla

 

1 Cup Dried Fruits or raisin (optional)

 

3 Tablespoon Browning

 

Instructions

 

  1. Wash the sweet potatoes off properly, then peel the skin off because you will be grater them. This part of it will be hardest, so I usually cut the potatoes into smaller pieces before I start to grater them.

A potato that is 6 inches long I slice it vertically three times. Make sure to give it a next wash with water before you start to grater them.

 

 

 

Grated Potato

 

2 Now that you have done that, time to add the rest of the ingredients to the potato.

 

Add 2 cup coconut milk then mix for 1 minute.

 

Add flour, sugar, salt, butter, (raisin or dry fruits) and vanilla

 

3 Mix together everything for 3 minutes or till everything is totally mixed in, and you can only see and feel the potato. You can add browning to give the potato pudding a darker look.

 

4 Pre Heat your oven at 400 degrees F and keep it like that

 

5 Use a none stick baking pan and use butter to grease it if you don’t have parchment paper

 

5 Pour the mixture in the pan to max 3 inches in height to allow it to properly bake at 400 degrees F for 40 to 60 minutes or until done.

You can use a knife and push in the middle of the pudding, then take it out to see if it’s baked inside.

 

If the knife comes out wet or slightly wet, that means it’s not baked inside fully yet. When it comes out dry, that means its bake fully inside.
